Black Bean Brownies

    This is a wonderful no-flour, high fiber alternative to a traditional recipe that both kids and adults will love. One of my favorites!

    • 1 (15 ounce) can black beans, rinsed and drained (dehydrated and then rehydrated would be a better option)
    • 3 eggs
    • 3 tablespoons coconut oil
    • 1/3 cup cocoa powder
    • 1 pinch salt
    • 1 teaspoon vanilla extract
    • 1/4- 3/4 cup agave nectar, honey or coconut palm sugar (adjust the amount according to your taste)
    • 1/2 cup dark chocolate chips (optional)
    • 1/2 cup coarsely chopped walnuts (optional)
    1. Preheat oven to 350F degrees.
    2. Lightly grease an 8-inch square baking pan and set aside.
    3. Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender or food processor until smooth.
    4. Pour the mixture evenly into the prepared pan.
    5. Sprinkle chocolate chips and walnuts (if using) over the top of the mixture.
    6. Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 25 to 30 minutes.
    7. Cool completely on a wire rack and then cut brownies into desired size and shape.
