Bananas are an excellent source of potassium, magnesium and manganese along with many other nutrients. Goji berries provide good amounts of vitamins A and C and also iron.
My muffin recipe is made with less wheat and mostly coconut flour.
1 cup coconut flour, 1/2 cup whole wheat flour, 1 tsp non-alum baking powder, 1 tsp non-alum baking soda, 1 tbsp ground flax seeds, 2 tbsp hemp seeds, 1/2 tsp natural sea salt.
Wet Ingredients (plus palm sugar):
3/4 cup coconut palm sugar, 3-4 frozen bananas (thawed), 1 egg, 1/3 cup grape seed oil, 1/2 cup soaked goji berries, 1/4 cup water.
Preheat oven to 350 degrees. Mix all wet ingredients and sugar, except goji berries, until smooth. Add dry ingredients slowly and mix until just moistened. Blend in goji berries. Spoon into muffin tins and bake for approximately 25 mins. Enjoy 🙂
