Figs are delicious and often available late summer, early autumn. Try this dressing on a crisp apple and green salad or as a chicken marinade.
5 Fresh Figs
6 tbps balsamic vinegar
1-2 tbsp maple syrup
1/2 tsp natural sea salt
1/2 cup olive oil (I suggest using grapeseed or coconut for marinade)
freshly ground black pepper to taste
Place figs, vinegar, maple syrup and salt in a blender and blend on medium until combined and figs are lightly pureed. Pour in olive oil with blender on low. Add black pepper if desired.
Store dressing in glass jar for 7-10 days in refrigerator.
