Quick and Easy Fiber Fruit Bars

    Kids need to eat seeds (and nuts, unless they have an allergy) for proper growth and development. This recipe can be easily packed in a lunch for school.

    1/2 cup honey, 1 cup rolled oats, 1/2 cup raisons or craisons, 1/2 cup sunflower seeds, 1/4 cup dates or dried apricots, 1 tbsp ground flax seed.

    Heat the honey in a saucepan and stir in the other ingredients. Grind whole flax seed in coffee grinder and add to the mixture. Press into the pan and let dry. Cut into bars and refrigerate or serve. (makes 10-12 bars)

    *I substitute many other good seeds and nuts (when they do not get sent to school) Sometimes I add some coconut or cocoa or carob, hemp hearts. I sometimes use brown rice syrup in place of honey to cut the sweetness.
