Whipped Sweet Potatoes
Sweet potatoes are very healthy and great for balancing blood sugar. This is a simple twist to the usual.
2 to 3 pounds of sweet potatoes
1/2 cup almond milk
1/4-1/2 tsp cardamon
Dash of sea salt and pepper
Fresh sprouts
Assembly:
Peel the potatoes and cut into chunks. Steam them until tender. Add milk and beat with a mixer until light and fluffy. Add sea salt and pepper. Finish with adding fresh green sprouts.
Serve and enjoy!
Tomato & Avocado Herbed Dressing
Ingredients:
1/4 cup flaxseed and sesame oil mixed (not toasted)
1 Clove fresh garlic
pinch of black sesame seeds
Juice of 1-2 lemons
Flesh from 1 Avocado
1 small tomato (grape)
Fresh basil and cilantro to taste
a splash of canadian maple syrup
dash of sea salt
pepper
splash or two of water if too thick
Directions:
Blend well in magic bullet or small mixer and fold into your favorite salad.
Serve with water and lemon.
Hint: Dressing goes well with bacon or apple!
I made my salad with fresh organic greens and spinach, soaked walnuts, slivered carrots, fresh tomato, asparagus a bit of left over chopped bacon pieces and topped it with a sprinkle of black sesame seeds.
